Comfort Food

I stayed home sick from work yesterday and didn't eat much throughout the day.  By dinnertime, I was starving.  I browsed through my bookmarked recipes and settled on this one.  SUCH a good choice.  It's easy and quick and such a comfort food.

Macaroni and Cottage Cheese Casserole
makes 6 generous portions
prep time: 20 mins.
cook time: 35 mins.

Ingredients:
  • 8 oz. dry elbow macaroni
  • 1 1/2 cup small curd cottage cheese
  • 8 oz. shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • pinch of salt
  • black pepper to taste
  • 2/3 cup plain bread crumbs
  • 3 tbsp. melted butter
  1.  Preheat oven to 375 degrees F.
  2. Bring a pot of well-salted water to a boil and cook pasta one minute less than the directions call for.
  3. Drain very well and add to a 9x12 baking dish.
  4. Stir in the cottage cheese, cheddar cheese, sour cream, milk, Parmesan cheese, salt, and pepper.
  5. In a small bowl, stir together the bread crumbs and melted butter.  Sprinkl evently over the top of the noodle/cheese mixture.
  6. Bake for 35 minutes, or until top is golden brown and bubbling.
